Buckwheat Porridge
Buckwheat is packed with essential nutrients, including high levels of fiber, protein, vitamins (such as B vitamins), and minerals (like magnesium, manganese, and iron). It’s a safe grain alternative for those with gluten intolerance or celiac disease.

1 dl buckwheat (pre soaked)
1 dl walnuts (pre soaked)
2 dates
1 dl choice of milk
Pinch of salt
Cardamom

Soak buckwheat grains and nuts overnight, rinse and blend together with dates, spices and milk until smooth.
Serve with any topping, make sure to have something crunchy on it like coconut flakes, nuts or cocoa nibs as it is very smooth in texture.
This is a great alternative to chiapudding which is also so easy to have ready made in the fridge.
BANANA SPLIT
Replace the traditional ice cream and sugary toppings with nutritious ingredients like fresh bananas and yogurt. This refreshing and healthy banana split is not only yummy but also packed with essential nutrients, making it a perfect option for breakfast or as a dessert.

1 1⁄2 dl Greek yogurt/curd or cottage cheese
1/2 cup coconut
1 Banana
1 cup Granola
1 tsp Maple syrup
½ tsp Cocoa/cinnamon
Fresh berries
Tip! Add seeds for extra protein

Whisk yogurt and coconut in a bowl.
Peel the banana and split it lengthwise and eggs on a plate.
Place the coconut yogurt between the banana halves.
Drizzle the maple syrup over the yoghurt, sprinkle granola over and decorate with fresh berries. Sprinkle some cocoa/cinnamon on top
BERRY BOWL
A berry smoothie bowl is not only visually appealing but also provides a boost of antioxidants, vitamins, and fiber, making it a perfect choice for a nourishing breakfast or as a snack to recharge your energy levels during the day.

2 dl frozen mixed frozen berries (blueberries/strawberries/raspberries)
1 frozen banana
1-2 soft dates, soaked and soft
1 dl milk of your choice
Toppings: Peanut butter, Chopped nuts, Fresh berries

Let the banana stand for 5 minutes before mixing, it will be easier then.
Mix all the ingredients in a strong blender or food processor. The consistency should be creamy, {like a soft serve ice cream} add more milk if it is difficult to mix.
Serve in a bowl, drizzle with peanut butter, chopped nuts and top with fresh berries.
Tip, if you want to give the bowl a nutritional boost, you can add a handful of spinach, you won't be able to taste or see change in color.

What are some strategies for preparing healthy breakfasts in advance?
Make sure to plan your breakfast the night before so it goes faster in the morning. Take out frozen berries, prepare a chia pudding or overnight oats, or prepare a smoothie bag with fruit and vegetables to keep in the fridge or freezer. In the morning, mix it with liquid, and you’ll have a smoothie ready in a flash. Having a plan for your next meal makes it much easier to eat healthier.
How important is hydration at breakfast, and what are the best drinks to accompany breakfast?
After a night's sleep, the body is dehydrated and needs rehydration. A glass of lukewarm lemon water can be one of the easiest and best things we can give the body in the morning. It hydrates, balances, and kick-starts the body's natural cleansing process. For breakfast, I like to drink a matcha latte to boost my antioxidants.
How can busy individuals or those with irregular schedules maintain a healthy diet?
Eating healthy requires planning and to have the right ingredients at home. It is preferable to have a plan and prepare food in advance to make it go more smoothly. Make changes such as cutting down on sugary products and fast carbohydrates, and instead, add good fats and more vegetables to every meal. Cooking your own food is always the best option!
